What is Burnt Basque Cheesecake?

A crustless cheesecake baked at high heat to get that signature burnt top while staying soft and custardy inside.

 

 

Main Ingredients:

  1. Ice cream – 227 g

  2. Cream cheese – 454 g

  3. Eggs – 3

  4. Vanilla essence – 1 tsp

 

How to make Burnt Basque Cheesecake

  1. In a bowl, combine ice cream, cream cheese, eggs, and vanilla. Whisk till completely smooth with no lumps.

  2. Line a non-stick springform cake pan with parchment paper and pour the batter in.

  3. Place the cake pan in a larger tray with some water (water bath).

  4. Bake at 180°C for 25–30 minutes till the top is dark and caramelised but the center is still slightly jiggly.

  5. Let it cool, then refrigerate for 3–4 hours to set.

  6. Slice and enjoy the creamy, burnt-top goodness.
