What is Pancake Empanada?

 

It’s a thick, soft pancake cooked on one side, then filled with Nutella and folded into a semicircle—like an empanada with a dessert twist.

 

 

 

Main Ingredients:

 

For Pancake Batter (Eggless):

  1. Maida – 1 cup
  2. Sugar – 2 tbsp
  3. Baking powder – 1 tsp
  4. Salt – a pinch
  5. Milk – ¾–1 cup
  6. Oil – 1 tbsp

For Filling:

  1. Nutella – as needed

  2. Butter – for cooking

 

 

How to make Pancake Empanada

 

  1. In a bowl, mix maida, sugar, baking powder, and salt. Add milk and oil, whisk into a smooth, lump-free batter (slightly thick).

  2. Heat a pan with butter, pour a ladle of batter, cover and cook on low-medium heat until bubbles form and the base is set (cook only one side).

  3. Take the pancake out, place a dollop of Nutella in the center. Fold into a semicircle and pinch the edges to seal like an empanada.

  4. Serve warm while the Nutella is still gooey and melted.
