Mango Tres Leches: Soft Vanilla Sponge Soaked in Mango Milk


 

A tropical twist on the classic tres leches—this soft, eggless vanilla sponge is soaked in a rich mango milk mixture and topped with cream and fresh mangoes.

 

 

 

 

What is Mango Tres Leches?

 

A light sponge cake soaked in a three-milk mixture, here infused with fresh mango for a juicy, creamy, melt-in-the-mouth dessert.

 

 

 

Main Ingredients:

 

Vanilla Sponge:

  1. Milk – 1 cup (lukewarm)

  2. Vinegar – 2 tsp

  3. Butter – ⅓ cup

  4. Vanilla essence – 1 tsp

  5. Maida – 1 cup

  6. Powdered sugar – ½ cup

  7. Baking powder – 1 tsp

  8. Baking soda – ½ tsp

Mango Milk Mixture:

  1. Milk – 2 cups

  2. Condensed milk – ½ cup

  3. Fresh cream – ½ cup

  4. Mango – 1

Topping:

  1. Whipped cream

  2. Chopped mango

 

 

 

How to make Mango Tres Leches

 

  1. Mix milk and vinegar, rest for 2–3 mins.

  2. Add melted butter & vanilla. Sift in dry ingredients and whisk into a smooth batter.

  3. Pour into a greased non-stick pan, tap gently. Cover and cook on lowest flame for 15 mins (seal lid if needed). Rest covered for 10–15 mins more.

  4. Check doneness, cool completely, demould and cut into slices. Poke holes all over.

  5. Blend mango pulp with some milk, strain, mix with remaining milk, condensed milk & cream.

  6. Pour mango milk over sponge evenly. Chill for a few minutes.

  7. Top with whipped cream and chopped mango. Pour extra mango milk while serving.

 

 

Expert Tips:

 

  1. Don’t overmix batter to keep sponge soft.

  2. Let the cake soak well for best flavour.
