How to Make Sama Khichdi in Pressure Cooker

 

Step-by-Step:

 

  1. Prepare the Ingredients:

    • Rinse and soak ½ cup sama chawal for 15–20 minutes. Chop bottle gourd and potatoes.

  2. Sauté Aromatics:

    • In a pressure cooker, heat 2 tbsp ghee. Add cumin seeds, curry leaves, chopped green chillies, and grated ginger. Sauté until fragrant.

  3. Add Veggies & Spices:

    • Add chopped bottle gourd and potatoes. Sprinkle clove-cinnamon powder, rock salt, and optional sugar.

  4. Add Sama Chawal:

    • Add soaked sama rice and ½ cup buttermilk. Pour in 2 cups total liquid (buttermilk + water combined).

  5. Pressure Cook:

    • Mix well and close the lid. Cook for 4 whistles on low flame.

  6. Finish and Serve:

    • Let the pressure release naturally. Open the lid, fluff the khichdi gently, and garnish with coriander.

    • Serve hot with fasting raita, green chutney, or curd.
