Suji Halwa: Ghee-Roasted Suji Halwa with Fried Almonds, Pistachios & Saffron
Suji Halwa is a classic Indian dessert made by slowly roasting semolina in ghee and cooking it with sugar and water until rich, smooth, and glossy. In this version, almonds and pistachios are first fried in ghee, then crushed coarsely and added at the end for a delicious nutty texture. Saffron gives the halwa a beautiful golden colour and delicate aroma.

What is Suji Halwa?
Suji Halwa is a traditional Indian sweet made primarily with semolina, ghee, sugar, and water. The key to a delicious halwa is properly roasting the suji in ghee before adding the liquid. This develops a deep, nutty flavour and gives the finished halwa its characteristic richness.
Main Ingredients of Suji Halwa:
For the Halwa
-
Suji/Semolina – 1 cup
-
Ghee – ½ cup
-
Sugar – ¾ cup
-
Water – 2½ cups
-
Almonds – ¼ cup
-
Pistachios – ¼ cup
-
Saffron – 8–10 strands
-
Warm Water – 2 tbsp, for saffron
What Is So Special About Suji Halwa?
The nuts are fried directly in the ghee before the suji is added. This allows their flavour to infuse into the ghee, which then gets absorbed by the roasted semolina. The saffron adds colour and aroma, while the coarsely crushed nuts provide a lovely contrast in texture.

Once cooled, crush them coarsely and keep aside.
Step 2: Roast the Suji

Cook for another minute.
Step 4: Add the Water

Slowly add the water little by little while stirring continuously.

Expert Tips
-
Roast the suji slowly and patiently for the best flavour.

Keep stirring continuously while roasting to prevent the suji from burning.
-
Add the water gradually while stirring to avoid lumps.
-
Use the same ghee used to fry the nuts for a deeper, nuttier flavour.
-
Don't crush the nuts too finely—the coarse texture gives the halwa a better bite.
