Fully ripe mango fruits are then washed, blanched, pulped, deseeded, centrifuged, homogenised, concentrated when needed, thermally processed, and aseptically filled to keep them sterile. Cutting, removing the stones, refining, and packing are all parts of the process. In case of aseptic products, the pulp is sterilised and packed in aseptic bags. The refined pulp is also packed in\scans, hermetically sealed and retorted. Frozen pulp is pasteurised and deep-frozen in plate freezers. The process makes sure that the final product still has the natural taste and smell of the fruit.

  • It is the base for many kinds of jams and marmalades.
  • It is used to make a dish called "aam ras," which goes well with "puris."
