How to make nihari masala at home?




  • 8 - Bay leaves
  • 15 pieces - Cloves 
  • 2 pieces - Star Anise
  • 6-6 3" inches - Cinnamon sticks
  • ½ piece - Nutmeg 
  • 20 pieces - Green Cardamom
  • 1.5 tbsp - Fennel Seeds 
  • 6" inches - Dry Ginger(Saunth)
  • 1 tsp - Black Cumin
  • 40 corns - Black pepper 
  • 2 Tsp - Cumin Seeds
  • 1 tbsp - Alco Turmeric powder
  • ½ tsp - Mace
  • 3 Tsp - Coriander Seed




  1. To prevent over-roasting, roast each item listed above individually. Roasting should be done on a sturdy pan base.

  2. Grind the ingredients after mixing them all together.

  3. If necessary, sieve the coarse components before storing the fine powder in an airtight container.
