Chicken Chaukauni is a North Indian-style preparation where crispy chicken is tossed with raw onions, green chillies, herbs, and a spiced yoghurt tempering poured hot for maximum aroma.

 

 

Main Ingredient of Chicken Chaukauni:

  • Boneless chicken – 400 g

  • Ginger garlic paste – 1 tbsp

  • Curd – ½ cup

  • Onion – 1 medium, sliced

  • Green chillies – 2–3, sliced

  • Red chilli powder – 1 tsp

  • Turmeric powder – ½ tsp

  • Black pepper – ½ tsp

  • Lemon juice – 1 tbsp

  • Kasuri methi – 1 tsp

  • Fresh coriander – 2 tbsp

  • Oil – as required

  • Ghee – 1 tbsp

  • Zeera – 1 tsp

  • Whole red chilli – 1–2

  • Salt – to taste

How to make Chicken Chaukauni

  • Marinate chicken with ginger garlic paste, red chilli powder, turmeric, salt, pepper, lemon juice, and oil. Rest for 30 minutes.

  • Cook marinated chicken on high heat until cooked through and lightly crispy.

  • Transfer chicken to a bowl. Add sliced onions, green chillies, coriander, and crushed kasuri methi.

  • Whisk curd until smooth.

  • Heat ghee, add zeera, whole red chilli, and turmeric. Pour this hot tempering into curd and mix immediately.

  • Add tempered curd to chicken, toss well, and serve hot.

  1. Add tempering to curd off the flame to avoid curd splitting.

  2. Toss and serve immediately to maintain heat and crunch.
