What is Garlic & Chives Focaccia?
A classic Italian flatbread made with a high-hydration dough, dimpled and baked with olive oil—this version is elevated with a buttery garlic and chive topping.
Main Ingredients:
- Bread flour – 600 g
- Warm water – 475 ml
- Dry yeast – 7 g
- Sugar – 5 g
- Salt – 12 g
- Olive oil – 60 ml
Garlic Chive Butter:

Butter – 3–4 tbsp

Garlic – 1 tbsp (chopped)

Chives – 2 tbsp (chopped)

Black pepper – to taste
How to make Garlic & Chives Focaccia

In warm water, add yeast and sugar. Let it bloom for 5–10 minutes.

Sieve flour into a bowl, add yeast mixture and mix till combined. Add salt and olive oil, mix and incorporate into a sticky dough. Rest for 30 minutes.

Perform stretch and fold 4 times at 30-minute intervals to build structure.

Transfer dough to a well-oiled baking pan. Let it rest for another 30 minutes.

Mix butter, garlic, chives, and pepper.

Spread garlic chive butter generously over the dough and dimple it with your fingers.

Bake in a preheated oven at 200°C until golden brown and crispy.
