Mini Ghevar: Easy Homemade Ghevar with Rabdi

Ghevar is one of those classic Indian sweets that looks complicated but can actually be made much more easily with the right technique. These mini ghevars are made in an appam pan, giving you individual portions with the signature crispy, lacy texture. Serve them with sugar syrup, chilled rabdi, and pistachios for a festive dessert.

What is Mini Ghevar?

Ghevar is a traditional Rajasthani and North Indian sweet made from a thin batter that is poured into hot oil to create a honeycomb-like, crispy pattern. These mini versions are made in an appam pan for an easier and more controlled method.

Main Ingredient of Mini Ghevar:

  1. Ghee – 2 tbsp

  2. Ice cubes – 4–5

  3. Besan – 2 tbsp

  4. Maida – ½ cup

  5. Water – ½ cup, or as required

  6. Oil – for frying

  7. Sugar syrup – ½ cup

  8. Rabdi – ½ cup

  9. Pistachios – for garnish

What Is So Special About Mini Ghevar?

The appam pan makes this traditionally tricky dessert much easier to prepare. Instead of pouring batter into a large vessel, you can make small individual ghevars with the same crispy, lacy texture.

Quick and Easy Mini Ghevar:

Blend the ghee, ice, besan, maida, and water into a smooth batter. Pour it drop by drop into hot oil in an appam pan until the batter forms the classic ghevar pattern. Finish with sugar syrup and chilled rabdi.

How to make Mini Ghevar

  1. Add ghee, ice cubes, besan, maida, and water to a blender.

  2. Blend until you get a smooth, lump-free batter.

  3. Heat oil in an appam pan.

  4. Slowly pour the batter drop by drop into the hot oil.

  5. Continue pouring until the batter creates the characteristic lacy ghevar pattern.

  6. Cook until crisp and golden, then carefully remove.

  7. Drizzle with sugar syrup.

  8. Serve with chilled rabdi and pistachios.

Expert Tips

  1. Keep the oil properly hot so the batter forms a crisp, open texture.

  2. Pour the batter slowly and steadily instead of adding it all at once.

  3. Make sure the batter is smooth and fairly thin for a delicate ghevar texture.
