Red Sauce Pasta: Pasta tossed in a tangy, spicy, tomato-based sauce made with puree, ketchup, and herbs. It has a bold and zesty flavor.

Mix Sauce Pasta: The same tomato-based red sauce enriched with milk, cream, and cheese. This creates a pink, creamy sauce that balances tanginess with smoothness.

 

 

Main Ingredient of Red sauce & mix sauce pasta:

Base Sauce

Red & Yellow Bell Peppers – as needed (sliced)

Olive oil – 1 Tbsp

Milk – 1 cup

Fresh cream – 2 Tbsp

Tomato puree – 3 Tbsp

Tomato ketchup – 3 Tbsp

Processed cheese – 2 cubes

For Cooking Pasta

Oil – 2 Tsp

Butter – 2 Tbsp

Garlic – 1 Tbsp (finely chopped)

Onion – 1 medium (chopped)

Sweet corn & broccoli – optional

Chilli flakes – 1 Tbsp

Pizza seasoning – 1 Tbsp

Salt – to taste

Boiled pasta – 250 g

Cheese slices – 2 (optional, for extra creaminess)

 

 

What Is So Special About Red sauce & mix sauce pasta?

The same base sauce gives you two variations – tangy Red Sauce Pasta and creamy Mix Sauce Pasta.

Loaded with flavors from garlic, onion, bell peppers, and cheese, it tastes just like a restaurant-style dish.

It’s versatile — you can add veggies like corn, broccoli, mushrooms, or even chicken/paneer to make it more wholesome.

Uses simple pantry ingredients like milk, cream, tomato puree, and cheese.

One-pan recipe – boil pasta separately and toss it in the sauce.

How to make 

Step 1: Boil the Pasta

1. In a large pot, bring water to a boil. Add a pinch of salt and a few drops of oil.

2. Add 250 g pasta and cook until al dente (soft yet slightly firm).

3. Drain, rinse with cold water, and keep aside.

Step 2: Prepare the Base Sauce

1. Heat 2 tsp oil + 2 tbsp butter in a pan.

2. Add 1 tbsp garlic (chopped) and sauté for a few seconds.

3. Add 1 medium onion (chopped) and cook until translucent.

4. Add sliced red & yellow bell peppers (and optional broccoli, corn). Stir-fry for 2–3 minutes.

Step 3: Make the Tomato Sauce

1. Add 3 tbsp tomato puree and cook for 2 minutes.

2. Add 3 tbsp tomato ketchup, 1 tbsp chilli flakes, 1 tbsp pizza seasoning, and salt to taste.

3. Stir and let it cook until the oil starts to separate.

Step 4: Turn It Into Red Sauce Pasta

At this stage, add the boiled pasta directly, toss well, sprinkle grated processed cheese if you like, and serve as Red Sauce Pasta.

Step 5: Turn It Into Mix Sauce Pasta (Pink Sauce)

1. Into the same sauce base, pour 1 cup milk and mix well on low flame.

2. Add 2 tbsp fresh cream and 2 cubes processed cheese. Stir until cheese melts and sauce becomes creamy.

3. If desired, place 2 cheese slices on top, cover the pan for a minute to let them melt in.

4. Add boiled pasta, toss until evenly coated, and cook for 1–2 minutes.

Step 6: Serve

Garnish with extra chilli flakes, pizza seasoning, or fresh herbs.

Serve hot as a cozy, comforting meal.

Expert Tips

1. Cook Pasta Al Dente – Don’t overcook pasta; keep it slightly firm so it doesn’t get mushy when mixed with the sauce.

2. Reserve Pasta Water – Always save ½ cup pasta water before draining; it helps adjust the sauce consistency and makes it cling better to pasta.

3. Add Milk Carefully – For mix sauce, add milk on low flame and stir continuously to avoid curdling.

4. Cheese for Creaminess – Add processed cheese cubes for a smooth, creamy texture. For extra richness, finish with cheese slices or grated mozzarella.

5. Balance Flavors – Taste the sauce before adding pasta; adjust chilli flakes, seasoning, or ketchup to get the right balance of tangy, spicy, and creamy.

6. Toss, Don’t Overcook – Once pasta is added to the sauce, toss gently for 1–2 minutes. Overcooking will make it sticky.

7. Use Fresh Cream at the End – Add cream after the flame is low or switched off to keep it silky and prevent splitting.

8. Customize Veggies – Corn, broccoli, mushrooms, or zucchini can be added to make it more wholesome.
