Stuffed Aloo Paratha: Crispy, Golden Paratha with Spiced Potato Filling

What is Aloo Paratha?
It’s a stuffed flatbread made with whole wheat dough filled with a spiced potato mixture, rolled and cooked on a hot tawa with ghee until golden and crisp.
Main Ingredients:

Atta (whole wheat flour) – 2 cups

Boiled potatoes – 3–4

Onion – 1 (finely chopped)

Green chilli – 1–2
-
Jeera powder – 1 tsp
-
Coriander powder – 1 tsp
-
Salt – to taste

Oil – 1–2 tbsp
-
Ghee – for cooking
How to make Aloo Paratha

Knead atta with water and a pinch of salt into a soft dough. Rest for 15–20 minutes.

Heat oil in a pan, add onion and green chilli, sauté till soft. Add jeera powder, coriander powder, salt, and mashed boiled potatoes. Mix well and cook for 2–3 minutes. Let it cool.

Roll a small portion of dough into a circle. Fold two opposite sides and pinch to form an oyster-like shape. Place a ball of potato filling on one side, fold over, seal, and gently roll again.

Cook on a hot cast iron tawa, applying ghee on both sides, till golden brown and crisp.
