Step by step process to make Aloo Baingan
1) Add oil to the saute pan and saute fresh cut brinjal slices till light brown. Transfer the seared brinjal slices to a separate plate.

Potato - 3
Tomato -1 (large)
Ginger - 3 inch
Garlic cloves - 15 to 1
Black cardamom -1
Bay leaves -2
Cumin seeds -1 tsp
Cinnamon stick - 1 inch
Turmeric powder -1 tsp
Red chili powder -2 tsp
Coriander powder - 2 tsp
Cumin powder -1 tsp
Garam masala powder - 1 tsp
Salt to taste
Cooking oil - 5 tbsp
Add oil to the saute pan and saute fresh cut brinjal slices till light brown. Transfer the seared brinjal slices to a separate plate.
Now add sliced potatoes to the same pan and brown them till properly cooked.
After sauteing these vegetables separately . Add some oil , your choice of whole spices for tadka (for good smell and taste add all that we have mentioned in ingredients ) , chopped onion and green chillies mix properly . Once the onion starts cooking add ginger garlic paste to the same. Cook till brown/ golden.
Now add tomato curry (make sure the grinding is properly done). To the same add turmeric , garam masala , coriander powder and salt as per taste and preference.
Cover this with a lid and cook till a nice fragrance of all the cooked masala is ready to excite you.
Now add the sauted brinjal and potatoes to the gravy/masala. Cook till the masala and sliced veggies are cooked.
Serve with your choice of roti , rice or bread.
