How to make Chicken & Egg Fried Rice 

  1. Start by cooking the rice. For this we will add one cup of soaked white rice into an Anyday large shallow dish. Add the water, season it with oil and salt. Put on the lid with the knob open. Microwave it on power 3 for 22 minutes  
  2. Slice the white and green parts of the spring onions finely and keep them separate. Mince the garlic cloves. Dice the chicken thighs into even cubes. Keep everything ready in their bowls.  
  3. Crack and whisk 3 eggs in a bowl. Heat an accent nonstick chef’s pan and add oil into it. Add your eggs and scramble them lightly. Remove them from a pan into a bowl. Take out your rice from the microwave and let them rest in the anyday dish covered until its time to add them.
  4. Add some more oil and on high heat add your chicken thigh cubes. Stir fry for 3-4 minutes. Add the minced garlic and saute it for 30 seconds. Add the white part of the spring onions and stir fry for another 2-3 minutes. 
  5. Add in your cooked rice to the pan, along with the green onions, and eggs. Add the soy sauce and maggi seasoning, season to taste with salt and pepper. Toss and stir fry them till everything is completely mixed.   
  6. Add the rice into a bowl and press it down. Flip the bowl and plate them in a flat or deep dish, garnish with some more sliced green onions and serve hot.  


Expert Tips

  1. All the vegetables need to be cut in even sizes so that they cook together evenly.
  2. Make sure that before you start to stir fry all the vegetables are ready to be cooked.
  3. The eggs don't need to be overcooked to a rubber texture, just cook them to a soft stage and take them out of the pan.
