What is Khaman Dhokla?

A light, spongy Gujarati snack made with besan, steamed (or microwaved here), soaked in a sweet-savoury syrup, and topped with tempering.

 

 

Main Ingredients:

Dhokla Batter:

  1. Besan – 1 cup
  2. Water – ¾–1 cup
  3. Sugar – 1 tbsp
  4. Salt – to taste
  5. Citric acid – a pinch
  6. Baking soda – ½ tsp

Tempering:

  1. Oil – 1 tbsp
  2. Mustard seeds – 1 tsp
  3. Curry leaves
  4. Green chillies

Soaking Liquid:

  1. Water – ½ cup

  2. Sugar – 1–2 tsp

Green Chutney:

  1. Coriander

  2. Garlic

  3. Salt

  4. Mota bhujia

  5. Lemon juice

  6. Oil

 

How to make Microwave Khaman Dhokla

  1. In a bowl, mix water, sugar, salt, and citric acid. Sieve in besan and whisk into a smooth batter.
  2. Add baking soda with a splash of water and mix gently till light and airy.
  3. Pour into an Anyday microwave-safe bowl, cover, and cook for 5 minutes.
  4. Heat oil, add mustard seeds, curry leaves, and green chillies. Add water and sugar, mix well.
  5. Cut dhokla into pieces and pour the tempering liquid over it.
  6. Blend coriander, garlic, salt, mota bhujia, lemon juice, and oil.
  7. Serve dhokla hot with chutney.

 

 

 

Expert Tips:

  1. Don’t overmix after adding soda to keep it fluffy.

  2. Pour tempering while dhokla is warm for better absorption.
