What is Khaman Dhokla?
A light, spongy Gujarati snack made with besan, steamed (or microwaved here), soaked in a sweet-savoury syrup, and topped with tempering.
Main Ingredients:
Dhokla Batter:
- Besan – 1 cup
- Water – ¾–1 cup
- Sugar – 1 tbsp
- Salt – to taste
- Citric acid – a pinch
- Baking soda – ½ tsp
Tempering:
- Oil – 1 tbsp
- Mustard seeds – 1 tsp
- Curry leaves
- Green chillies

Green Chutney:

Coriander

Garlic

Salt

Mota bhujia

Lemon juice

How to make Microwave Khaman Dhokla
- In a bowl, mix water, sugar, salt, and citric acid. Sieve in besan and whisk into a smooth batter.
- Add baking soda with a splash of water and mix gently till light and airy.
- Pour into an Anyday microwave-safe bowl, cover, and cook for 5 minutes.
- Heat oil, add mustard seeds, curry leaves, and green chillies. Add water and sugar, mix well.
- Cut dhokla into pieces and pour the tempering liquid over it.
- Blend coriander, garlic, salt, mota bhujia, lemon juice, and oil.
- Serve dhokla hot with chutney.
