Pumpkin Kheer

Serves 2-3

Ingredients

Pumpkin - 150 gms

Milk - 200 ml

Sugar - 1/4 cup

Cinnamon powder -1 tsp

Ghee - 1 tsp

Cardamom - 3-4

Saffron - 1/2 gm

A “not so common” rendition of the classic rice kheer. Pumpkin, being a vegetable with a naturally sweet taste makes it an amazing fit for desserts.



Method

1) Heat milk and boil pumpkin in the milk.

2) Add sugar to the milk along with cinnamon powder.

3) Let the pumpkin boil and become soft.

4) Strain the pumpkin and blend it in a fine puree and preserve the milk.

5) In a casserole, heat ghee and add the pumpkin paste and let it cook.

6) Add the preserved milk from before to the pumpkin paste and reduce till think.

7) Serve hot or cold.

Add some chopped coriander and season everything with red chilli powder, meat masala, garam masala and salt. 3) Mix everything together with a spatula and form even sized tikkis with oiled hands. 4) Heat a non-stick tawa and brush it with some refined oil all over. Sear the tikkis in batches on the tawa for 3-4 minutes per side. 5) Once grilled, serve them hot on a platter as it is or with some dip.   Expert Tips Refrain from over cooking the dal as it tastes better when it is a little grainy in the overall mix. If you don't have pine nuts, you can use chopped almonds in place of that.
