What is gobhi tikka masala?

Gobhi tikka masala is a vegetarian Indian dish that is made with marinated and grilled cauliflower florets in a creamy tomato-based sauce. It is a popular variation of the classic chicken tikka masala dish, which is a popular dish in Indian restaurants around the world.
To make Gobhi tikka masala, cauliflower florets are marinated in a mixture of yogurt and spices, including garam masala, cumin, coriander, turmeric, and red chili powder, and then grilled until tender and slightly charred.
The sauce for the dish is made by cooking onions and garlic in oil until golden brown, then adding in canned tomato puree, cream, and a blend of spices, including garam masala, cumin, coriander, turmeric, and red chili powder. The grilled cauliflower florets are then added to the sauce and simmered until the flavors meld together.
Gobhi tikka masala is typically served hot with steamed rice or naan (Indian bread) and garnished with fresh cilantro leaves. It is a flavorful and satisfying vegetarian dish that is a favorite in many Indian households and restaurants.

How to make Restaurant Style Gobhi Tikka Masala

  1. Start by marinating the gobi florets. Add all the dry spice powders and yogurt in a large bowl with the gobi and let it rest for 15 minutes. Once rested, heat some oil in a Centennial stainless steel kadai.
  2. In a clean Centennial stainless steel kadai, heat some oil and add the whole spices to saute lightly. Follow that by adding some ginger garlic paste and saute it till lightly golden brown. Add the dry spice powders and saute them for a while.
  3. To all this add some tomato paste, kasoori methi and yogurt. Stir to combine them all and add the fried gobi to the gravy. Finish it off with some fresh chopped coriander and a light drizzle of cream.

Expert Tips

  1. Make sure to let the gobi sit for a few minutes after marinating to break it down slightly.
  2. Do not deep fry the gobi, as that would saturate it with oil.
  3. The tomato paste should only be added once the ginger garlic paste is fully roasted.
