How to make Sindhi Kadhi 

  1. Start by adding halved tomatoes in a pressure cooker with a little water. Cook this for 4-5 minutes or 3-4 whistles till the tomatoes are fully tender. Blend the tomatoes into a smooth puree using an emulsion blender. 
  2. In a stainless steel Select kadai, add some vegetable oil with some hing, mustard seeds, cumin seeds and fenugreek seeds. Fry them for 20-30 seconds. Then add curry leaves, chopped ginger and chopped green chilli, mix and cook them for a few minutes.
  3. Add besan into the kadai and mix till incorporated. Roast for about 8 minutes till the besan is cooked and the kadhi is slightly golden brown. Add red chilli powder and mix it in.  
  4. Add 2 cups of water and mix till the kadhi is thick and smooth. Add the tomato puree and season with salt. Keep on adding water as required. Let it come to a boil, add turmeric and let it cook for a while.   
  5. To the kadhai, add halved potatoes, drumsticks and sliced green beans. Let it bowl and cover to cook it on medium flame. While that cooks, in a ceramic non-stick pan add some oil and cook lady fingers for 4-5 minutes. 
  6. Add the lady fingers to the kadai and let them cook for another 8 minutes till they become flavourful. Finish the kadhi with some imli pulp and let it bowl for a few more minutes.  
  7. Once nicely cooked, serve the kadhi while it is hot.  

Expert Tips

  1. If you want to make a urad dal kadhi, you can even add soaked toor dal with the tomatoes.
  2. Make sure the gas flame is low to ensure an even cook and avoid burning.
  3. You can use 4-5 kokum if you don't have imli pulp.
