Seasoning- the secret of naturally non-stick cast iron cookware

So, you recently purchased brand-new cast iron cookware, and you're excited to stir up some wholesome meal in it. Stop. It must first be seasoned. Seasoning is essential, even if you purchased cast iron cookware that has already been seasoned.

What is Seasoning?

Simply put, seasoning is the polymerization of oil into the cast iron surface. In addition to giving your cookware a classic black patina for a cooking surface that releases food naturally, seasoning also keeps your pan from rusting. Cast iron cookware that has been well-seasoned can actually last for many generations.

What effect does seasoning have?

Cast cookware features surface cracks and tiny pores. Food might become stuck to these pores when it cooks and seeps into those pores. Additionally, during cooking, the proteins from the meal may actually establish chemical interactions with the surface of the cookware, which may cause food to break. As a result, we must plug up these tiny pores and establish a barrier to stop protein from coming into contact with it.

Oil (or fat) polymerizes when heated in the presence of metal (cast iron) and oxygen, coating the cookware with a solid, plastic-like substance. The coating thickens as the oil is heated in the pan more frequently, giving it non-stick coating-like properties.

Prior to beginning the seasoning process, clean your cast iron cookware and allow it to dry.
Step 1: Evenly pour some oil onto the cookware, then use a paper towel to wipe up any extra oil. Any oil with a high smoking point is acceptable, including butter, coconut oil, sunflower or canola oil, and flaxseed oil.
Step 2: Set it on a stovetop and heat it until it begins to smoke. Turn off the heat and let the area to cool.
Step 3: Wipe the area clean and repeat the procedure three to four times.
