How to make Almond Chocolate Chip Cake ?
1) Preheat the oven to 165 degree celsius. Add the brown sugar and butter in a large bowl. With a hand mixer, start to cream them together, till they are completely incorporated.
2) To this mixture add 2 eggs, one at a time. Beat the eggs till they become light and airy.
3) Add the baking powder and almond powder to the airy mixture, followed by almond powder and refined flour. Beat them into the wet mixture.
4) Add the almond flakes and chocolate chips to this mixture and fold them in using a silicone spatula.
5) Transfer the batter to a nonstick loaf pan, spread it out evenly. Garnish it with some extra almond flakes and bake it into a preheated 165 degree oven for 20-25 minutes.
6) Once it comes out of the oven, let it cool down for 5-6 minutes. Demould it and slice the loaf cake into desirable pieces.
Expert Tips
1) Incorporate the butter and sugar thoroughly, till the sugar is completely creamed.
2) Make sure you don't add all eggs at once, or the mixture will split.
3) If you want, you also add some chocolate chips on top as a garnish.
