What is Banana Peanut Butter Bread?

Banana bread is made by adding mashed bananas to your general cake dough that is kept a little low on the sweetness to make it more balanced in the end. The end result tastes moist and soft and has a more dense texture than regular bread. It can be eaten by itself or enjoyed with some sweet spread or just some softened butter spread over it. A banana bread goes really well with peanut butter hence this recipe has peanut butter inside the batter as well as a honey and peanut butter glaze.

How to make Banana Peanut Butter Bread?

1) Start by preheating your oven to 180 degree celsius. Add the eggs, sugar and oil into a large bowl and start mixing it using an electric hand mixer till it's light and fluffy.

2) Add ripe bananas to the bowl as well, crush and whip them till incorporated. Add the flour, baking powder and cinnamon powder to the batter and fold them in using a silicone spatula.

3) Add peanut butter and mixed nuts into the batter and fold them together. In a non-stick loaf pan add the cake batter and bake it in a preheated 180 degree oven for 45 minutes.

4) While the cake is baking, prepare the glaze by mixing peanut butter, honey and milk. Apply the glaze as soon as the cake comes out of the oven.

5) Demould the cake and sprinkle some mixed nuts over the glazed cake and slice it open.

Expert Tips

  1. Mix the eggs, sugar and oil thoroughly to a light and airy texture otherwise the cake might become dense.
  2. If your bananas aren't ripe you can wrap them in a newspaper for a few hours or overnight to make them more ripe.
  3. Banana bread takes a longer time to bake so it can take more than 45 minutes in some ovens.
