Baba Ganoush

What is Baba Ganoush?

​​Baba ganoush is a Lebanese appetizers that is made using roasted eggplant, lemon juice, tahini, olive oil and in some cases yoghurt, too. It's made by roasting eggplant in the oven or on an open flame with the skin on it, so that the inside gets soft and pulpy. The pulp inside is removed and is finely chopped with the rest of the ingredients. Variations of this dish can have some finely chopped onions and parsley as well. Baba Ghanoush is served mostly as a Mezze, which means appetiser.

    How to make Baba Ganoush ?

    1) Pick some washed eggplants and slice them thick. Marinate the slices with some salt and pepper.

    2) Grill them on a hot griddle and get grill marks over it. Toss some garlic cloves into the pan. Brush it with some extra oil and take them off.

    3) Cool them down on a platter and remove the skin off the pulp. Add the skinless roasted pulp into a blender.

    4) With the eggplant, add the roasted garlic, tahini paste, lemon juice, salt and pepper and some chopped parsley into the blender. Finish it off with some olive oil.

    5) Blend it all into a fine paste and transfer it onto a platter. Spread the baba ganoush out evenly, top it with some more olive oil and press it down with a fork dipped in chilli powder.

    Expert Tips

    1. You can also roast the eggplants sliced half inside in the oven.
    2. If you want a more smoother sauce, you could also add a tbsp of yoghurt.
    3. Add more olive oil if the dip feels too dry.
