What are Broccoli and Cheddar Crepes?
Broccoli and cheddar crepes is a dish inspired by Mexican enchiladas. Enchiladas is a spicy and tangy vegetable or meat sauce, stuffed inside a tortilla, layed in a baking tray and baked with cheese on top of it. Similar to enchiladas this recipe takes flour crepes instead of tortilla wraps and has a broccoli and bechamel filling.
How to make broccoli and cheddar crepes?
1. In a clean bowl add refined flour, eggs and milk, whisk them all together. Whisk in melted butter and season the batter with salt and pepper. Set it aside for 20 minutes.
2. In a stainless steel frypan, melt butter and add some refined flour, mix them thoroughly. To the thick paste add some milk to make it into a sauce. Add some chopped onions to the sauce.
3. Season the sauce with salt and pepper and add the chopped broccoli florets to it with some grated whole cheddar cheese and keep stirring it till the cheese is completely incorporated.
4. Heat a non-stick pan and add a spoonful of the crepe batter to it. Rotate and tilt the pan to spread it evenly. After it is cooked solid, flip it using a spatula and cook the other side.
5. Lay the crepe flat and add in some cheesy broccoli filling into it. Fold it over and make it into a roll. Place all the rolls parallel in a small baking tray, top it with some grated mozzarella cheese.
6. Drizzle some hot sauce over the crepe rolls and sprinkle some smoked paprika. Bake the rolls at 180 degree celsius till the cheese is melted.
7. Enjoy these hot with the cheese oozing out.
