What is Acai Berry ?

​​Acai berry is a fruit that is small, round and black-purple in colour. It comes from the acai palm, which is one of the species of palm tree. The tree produces many other elements but acai berry is the most prominent reason it is cultivated nowadays. This pancake batter contains acai berry powder, which is a concentrate used to add the flavour in recipes.

    How to make Acai Berry and Coconut pancake?

    1) Prepare the batter in a bowl by adding refined flour, sugar, egg, melted butter and acai berry powder; top that off with coconut milk.

    2) Whisk the batter together with a wired whisk till a thick purple batter forms.

    3) Heat a pan and season it with a little oil. Add a ladle full of batter in the pan. Let it spread and cook from one side

    4) When the side dries out and bubbles appear, flip the pancake to the other side and take it off once done.

    5) Stack the pancakes one on top of the other. Place a knob of butter on top, and drizzle some maple syrup and icing sugar

    Expert Tips

    1) Do not over mix the batter, or the pancakes would be tight.

    2) Do not put too much oil in the pan.

    3) Make sure to cook the pancakes on medium low heat or they might burn.
