Orange and Mint Pie
Just like the classic lemon meringue pie, this is an orange pie that follows a similar pattern but with a more sweeter citrus flavour, along with the addition of mint. All these fresh flavours in a crispy and flaky pastry crust make this a perfect slice of pie!

How to make Orange and Mint Pie
1. Start by mixing the pie dough in a bowl by adding refined flour sugar and softened butter. Incorporate them all together into a cohesive dough. Take a non-stick pie tin and press the dough into it, spread it evenly and blind bake it in a preheated 180 degree oven for 20 minutes.
2. To prepare the orange curd, crack the eggs in a clean bowl and add sugar, orange juice, refined flour and lemon zest, with some mint leaves. Mix it all together using a whisk.
3. Pour the orange curd into the blind baked pie shell and bake it all for another 20 minutes in a preheated 180 degree oven.
4. Once baked, let the pie rest till completely cool, then slice it up and enjoy.
