Quick and Easy Stuffed Eggs:

This snack is hassle-free: boil eggs and potatoes, mash and season the potatoes, stuff the eggs with cheese, coat them in the potato mixture and sev, then deep-fry. Minimal prep and simple steps mean you can enjoy a crispy, cheesy treat in under 35 minutes!

How to make

1. Boil Ingredients:

Boil 3–4 medium potatoes until soft.

Boil 3 eggs, then separate the yolks from the whites.

2. Prepare Potato Mixture:

Mash the boiled potatoes in a bowl.

Add finely chopped coriander leaves, cumin powder, red chilli powder, chilli flakes, oregano, garlic powder, and salt. Mix well.

3. Stuff the Eggs:

Take each egg white and fill the cavity with a small piece of cheese.

4. Cover with Potato:

Flatten a portion of the potato mixture in your palm.

Place the stuffed egg white in the center and gently cover it fully with the potato mixture. Shape into a smooth ball.

5. Coat and Fry:

Make a thin flour slurry with 2 tbsp flour and 3 tbsp water. Dip each ball in the slurry.

Roll the balls in sev so they stick evenly.

Heat oil in a pan and deep-fry the balls on medium heat until golden and crispy.

Drain excess oil on paper towels.

6. Serve:

Serve hot with chutneys, sauces, or ketchup.

Expert Tips

1. Smooth Potato Mix: Make sure the mashed potatoes are lump-free for easy shaping around the eggs.

2. Cheese Choice: Use a semi-soft cheese like processed or mozzarella cubes that melt slightly while frying.

3. Spice Balance: Adjust chilli flakes and powder according to your taste—mild or spicy.

4. Sev Coating: Press the sev gently so it sticks well but doesn’t fall off while frying.

5. Oil Temperature: Fry on medium heat to ensure the balls are cooked through without burning the sev.

6. Prep Ahead: You can prepare the potato mixture and egg whites in advance, then assemble and fry when needed.

7. Serving Idea: Serve immediately for maximum crunch; leftovers can be reheated in an air fryer to retain crispiness.
