How to make

a) Make the Red Sauce

1. Heat 1 tbsp oil in a pan.

2. Add 1 tbsp garlic and sauté until fragrant.

3. Stir in 1 tsp chilli flakes and 1 tsp oregano.

4. Add 1 cup tomato purée, ½ tsp black pepper powder, and salt to taste.

5. Cover and cook on low for 3–4 minutes until slightly thickened. Remove and set aside.

b) Make the White Sauce Veggies

1. In the same or another pan, heat 1 tbsp oil.

2. Add 1 tbsp garlic and 1 medium onion (finely chopped) and sauté until soft.

3. Add 1 medium carrot (diced), 1 cup spinach, and salt. Cook for 2–3 minutes.

4. Crumble in 150 g paneer.

5. Pour in 1–1.5 cups milk and stir.

6. Season with 1 tbsp pizza seasoning and 1 tsp black pepper powder.

7. Cook until slightly thickened. Remove from heat.

c) Assemble the Lasagna

1. Grease a non-stick Meyer frypan or sauté pan lightly with butter/oil.

2. Place bread slices as the first layer (trim edges if needed to fit).

3. Spread some red sauce, then white sauce veggie mix.

4. Sprinkle mozzarella cheese generously.

5. Repeat the layers until ingredients are used up, finishing with cheese on top.

d) Cook Without Oven

1. Place a small katori (bowl) of water inside the pan (this creates steam and melts cheese faster).

2. Cover the pan with foil or a tight lid.

3. Cook on the lowest flame for 8–10 minutes, until cheese melts and the lasagna is heated through.

e) Serve

Cut into portions and serve hot.

Garnish with extra oregano or chilli flakes if desired.

Expert Tips

1. Trim the bread edges – This helps layers sit evenly and look neat.

2. Toast the bread lightly before layering – prevents sogginess and gives a better texture.

3. Use fresh tomato purée for a richer red sauce flavor.

4. Don’t overcook the veggies in white sauce – they should stay slightly crunchy for bite.

5. Paneer works as a protein boost and also makes the filling creamier.

6. The katori of water is a must – steam helps melt cheese evenly without drying it out.

7. Low flame only – prevents bread from burning at the bottom while cheese melts.

8. Rest for 2–3 minutes after cooking before cutting – this helps layers hold together.

9. Add extra seasoning between layers for more flavor in every bite.

10. Try flavored bread or garlic bread for a twist on the taste.
