Panch means five and phoron indicates tempering in Bengali. The five fragrant spices are therefore heated in oil until they sputter or crackle. Easy panch phoron or five-spice recipe:

Fenugreek, nigella seeds, cumin, black mustard, and fennel seeds are the five primary spices required to produce panch phoron.


  1. Take a teaspoon of each of the spices. You can reduce the amount of fenugreek if you want since it can taste bitter in excess.
