How to make Dahi Wale Aloo
- Start with the masala for the sabzi- heat mustard oil in a Trivantage kadai. To the oil add cumin seeds, chopped ginger and garlic, chopped onions and green chillies. Saute everything together.
2. Season the masala with salt and add boiled potatoes to it that have been cut into cubes. Stir and toss the potatoes into the masala to evenly coat them.
3. Add curd to the potatoes and mix everything together with some chopped dhaniya on top and cook it till the oil separates. Transfer the cooked aloo ki sabzi in a bowl while you prepare your tadka.
4. In a mini tadka pan, heat some refined oil, to that quickly add some cumin seeds, ginger juliennes and dried red chillies. Swirl everything together to fry them lightly and pour it over the aloo sabzi.

- Saute all the masala completely before adding the potatoes as the moisture would stop any further cooking.
- It's better to add the curd that is at room temperature to avoid any spatter when it touches the oil.
- Make sure to be quick with the red chillis in the tadka as they can burn very quickly.
