Khichdi or khichri is a recipe prepared with soaked Rice and Lentils like moong daal, which are cooked and mixed with some roasted masala. It is generally credited to originate from south Asian countries with roots being in India. Khichdi is prepared majorly in the northern parts of the country. Though even in South India many recipes are prepared with similar techniques and ingredients and can also be classified as khichdi. Khichdi has many variations, one example being sabudana khichdi which is generally prepared during navratri and eaten while fasting.
Quick and Easy Masala Khichdi
A basic khichdi is a staple for every Indian household, everyone knows what khichdi is; it also is generally introduced as the first meal of kids. Ideal as a comfort food, great during the time when we are under the weather and perfect when we want to prepare something wholesome quickly, khichdi has myriad uses as it contains a balanced nutrition that is necessary for us. So, this masala khichdi recipe is a must have for your recipe arsenal, cause you don't know when it might come in handy.
1) Soak dal and rice for a few hours before cooking (this is optional). Then, in a large stainless steel pot, add soaked dal and rice, followed by water in the pan.
2) Season this with salt. Add turmeric and oil to this and let it boil for 10-15 minutes or till fully cooked.
3) While this is boiling in Meyer Cookware, remove any scum that develops on the surface of the water, using a strainer or a flat ladle.
4) In a separate Meyer Non stick Pan, add ghee, cumin seeds, dry red chilli, chopped onions, chopped green chillies, chopped ginger and garlic. Saute this for a few minutes and add chopped tomatoes over this and mix them well.
5) Add the boiled and strained dal plus rice in the masala and stir it together till everything combines. Serve it hot in a bowl and garnish it with some chilli flakes and chopped coriander along with a dollop of ghee.
Expert Tips
1) Chop all the vegetables evenly, otherwise they might not cook correctly.
2) You can also melt some ghee in the pan with masala for some added taste.
3) You can add any seasonal vegetables according to your choice.
