The pineapple upside down cake was popularised in the USA by a company called Dole. In 1920 the company organised a pineapple recipe competition and received over 2500 recipes of an upside down pineapple cake. The company went ahead and advertised it, hence making it famous. Upside down cakes are generally cakes in which the pan is layered with a fresh topping in the beginning, and then cake batter is poured over and baked. Once baked the cake is inverted out of the pan and the bottom layer of toppings becomes upright, hence the name, upside down cake.
An upside down cake is the easiest way to elevate your regular dry tea cakes to a fancy full-fledged dessert . It has fresh sliced fruits and a thick brown sugar caramel- all included over a fluffy rich cake. Ingredients
Eggs : 4
Caster sugar : 90 g
Lemon zest : 1 lemon
Butter : 30 g
Refined flour : 85 g
Baking powder : 1 tsp
Butter : 85 g
Dark brown sugar : 225 g
Pineapple slices : 7
Cherries : 7
Directions
Preheat your oven to 180 degree celsius. In a large bowl add your eggs, sugar and lemon zest. Start mixing them with a hand mixer.
Now to the bowl add flour and baking powder, incorporate them too and set the bater aside.
In a separate cast iron skillet, add butter and let it melt. Add brown sugar to the melted butter and cook them together.
Once the sugar is dissolved into a thick glaze, place pineapple slices evenly on the pan.
In the middle of the pineapple add a cherry and pour over the prepared batter.
Spread the batter evenly and bake the skillet in a preheated 180 degree oven for 30 minutes.
Once fully baked, take the skillet out and let it cool a bit. Turn it over using a plate and enjoy.
