How to make Aloo Dum

  1. Heat some oil into a cast iron kadai, add boiled baby potatoes with some turmeric powder and salt. Toss and fry them lightly.  
  2. Prepare the masala separately. Add oil into the kadai, with some cumin seeds, whole spices, fried red chillies, dried red hing, mix the dry spice powders into water and pour that in, with some ginger paste.  
  3. Roast the masalas and add some blanched tomato puree, salt and sugar, with some melon seed paste. Mix it all in with some green peas and fried baby potatoes. Add whole green chillies and some water, cover and cook it for 10 minutes. 
  4. Take the cover off once the oil separates, top it off with some ghee and freshly chopped coriander.  


Expert Tips

  1. Make sure to fry the potatoes before adding them in the sabzi or they will disintegrate.
  2. Fry all the spices thoroughly before adding the tomato puree or they won't cook further.
  3. You can add the green chillies sparingly if you do not like too spicy food.
