How to make Cashew Nuts 3 different ways

  1. Start by roasting all the cashews together on a flat stainless steel pan. Heat the pan and spray some oil onto it. Toss the cashews and stir lightly to roast them evenly on medium low heat. Spray some more oil midway.  
  2. Transfer the roasted cashews in a bowl. Prepare the first flavour in a Circulon origin non-stick frypan. Heat some ghee and saute mustard seeds, dry red chillies and curry leaves into it. Followed by this add grated coconut and turmeric powder and mix.  
  3. Finally add ⅓ of the roasted cashews and toss them around to fully coat with the flavouring. Season them with salt and pepper, mix and transfer it away.  
  4. For the second filling in a clean Circulon Origin non-stick pan, spray some oil over medium heat. Add chopped lemongrass and soy sauce into it. Saute it and add sesame oil, chilli flakes, salt and pepper. Mix it and add the ⅓ of the roasted cashew nuts from before.   
  5. Toss them around to coat and set it aside. On the remaining ⅓ cashews, in a large bowl, sprinkle some peri peri spice into them, with salt and pepper. Spray some vegetable oil and toss them together.  
  6. Let all of them cool down completely and serve them in assorted bowls.

Expert Tips

  1. For an even roasting you can even roast your cashews in an oven at 200 degree celsius.
  2. To get a better flavour out of the cashews, you can replace the oil with ghee.
  3. If the peri peri is too spicy for you, you can reduce the quantity of the spice.
