How to make Chicken Tangdi
- Start by scoring the chicken drumsticks. For this take a drumstick and make diagonal cuts around half way through the flesh on both sides of the drumstick. Put all the drumsticks in one bowl.
- Now to make the marinade for the drumsticks we’ll add freshly squeezed lemon juice, salt , pepper, garam masala, red chili powder, Kashmiri chili powder, coriander powder, ginger & garlic paste, soy sauce, Red chili sauce and a splash of oil in the bowl with the drumsticks and mix well.
- Let the drumsticks marinate for at least 30 mins to 4 hours.
- Now we’ll cook the chicken. For this start by heating some oil in the Circulon Nonstick Covered Sauteuse on a medium heat. Place the chicken in the sauteuse , flipping occasionally for around 12-14 mins or until the chicken is 90% cooked.
- To give the tangdi char marks and a charred flavor, heat oil in the Meyer Cast Iron Grill until smoking hot. Put the chicken on the grill and cook on each side for around 2-3 mins until fully cooked and grill marks appear on the drumsticks.
- Remove the grill from the heat. Take a small metal bowl or make one using aluminum foil, keep this bowl in the grill and put a piece of hot charcoal in it. Put ghee or oil on top of the charcoal and cover the grill pan for 5 minutes.
- Put the Chicken Tangdi in a serving dish and garnish with finely sliced onion rings, lemon wedges and a mint chutney.

Expert Tips
- Make sure to score the chicken before marinating. This allows for the marinade to seep throughout the chicken.
- The longer you let the chicken marinate the more flavorful and tender the final product will be. Minimum 30 mins to a maximum of 4 hours.
- While cooking the chicken in the Circulon Nonstick covered sauteuse, use the included lid to cover the sauteuse to cook the chicken properly while keeping it juicy and tender.
- Make sure the cast iron grill is well oiled and sizzling hot before putting the chicken to ensure a good crust and less stickage to grill.
