What is Creamy Mac and Greens ?

Mac and greens is a quirky take on a very popular and loved american dish which is macaroni and cheese. It involves the same basic recipe of macaroni and cheese with a sweet and salty addition of some fibrous vegetables like broccoli florets, sliced onions and some mushrooms. All these vegetables are tossed in maple soy sauce mix and grilled to perfection. All of this is tossed inside a creamy macaroni and cheese sauce.

 

Quick and Easy Creamy Mac and Greens

Everyones bored with the usual mac and cheese and loves to give some new and quirky touches. So, if we are changing something, why not give it a healthier touch? The addition of some sweet and salty, stir fried vegetables, not only adds a more umami flavour to the macaroni, but also gives a slightly more guilt-free eating experience than regular mac and cheese.

  

How to make Creamy Mac and Greens ?

  1. Boil the macaroni till 90% cooked
  2. In a saucepan, melt butter and combine with flour
  3. Add the milk and make a thick sauce
  4. Add the cheese along with the parsley, chilly flakes, onion powder and garlic powder
  5. If you do not have onion powder and garlic powder, you can use freshly chopped onion and garlic as well
  6. In a bowl, add the olive oil, maple syrup and soy sauce., salt and pepper
  7. Add the florets of broccoli, sliced onions and mushrooms to it
  8. Heat a grill pan and grill the vegetables till almost cooked through
  9. Add the grilled vegetables to the sauce and give it a toss
  10. Garnish with basil leaves and olive oil
