Eggs : 3
Chocolate cookies : 5-7
Butter : 20 g
Dark chocolate : 200 g
Fresh cream : 20 ml
Start by separating 3 eggs in two bowls. Whisk the egg whites till stiff peaks form and set it aside.
In an electric grinder, break some chocolate cookies and grind them into a fine powder. Mix the ground cookies with some butter and set it aside.
Into the egg yolks, add the zest of half an orange. Whisk it together with the yolks and make it light and fluffy.
Add the dark chocolate chunks in a glass boiler over a double boiler. Add some fresh cream to the chocolate and melt it together.
Once the chocolate is melted and cool, add in the egg yolks and incorporate it thoroughly with the chocolate.
Take the whipped egg whites, and fold them into chocolate mixture in 3 batches to make the mixture light and fluffy.
Layer the mousse in a martini glass with the cookie crumble. Let it sit in the fridge for at least 4 hours and then garnish it with chocolate shards and orange zest.
The major orange flavouring in this recipe comes from the zest of the orange. If you want a more prominent orange flavour, you can add some orange juice to the egg yolks.
