- Brown sugar: 140 g
- Caster sugar: 140g
- Melted butter: 150 g
- vanilla extract: 2 tsp
- Eggs: 2
- dark chocolate: 200g
- Refined flour: 94g
- Cocoa powder: 25g
Start by melting the butter. Chop the dark chocolate into big chunks and set half of them aside. Melt the other half of the chocolate.
- Add both the sugars, butter and vanilla extract into a large bowl and start mixing them with a wire whisk or an electric mixer. Once combined add both eggs one at a time and mix them well.
- Add in the melted chocolate to the mixture and incorporate it well. Add in the flour and cocoa powder and fold it using a silicone spatula. Add in the chocolate chunks and fold them in as well.
- Transfer the brownie batter in a non-stick square cake pan and smooth out the top. Bake it inside a preheated 180 degree oven for 25-30 minutes.
Make sure the brownie is completely cool before demoulding it otherwise it can stick to the mould or even break apart while slicing it along.
