What is Lavaash ?

​​Lavaash is a flatbread which is quite thin. Though it is leavened in many recipes, it can also be made crisp without any leaveners and rising agents. It comes from Armenian cuisine in the middle east. The version we are familiar with is a non-leavened version baked thin till it gets crisp. The dough has a lot of oil and is seasoned with herbs to add flavour to the final crisp. It is accompanied with kebabs and dips of various kinds and is also served in middle eastern or mezze platters in several restaurants.

Quick and Easy Peri Peri Lavaash

One of those rare crispy breads that aren't fried but baked in the oven, making these lavaash a must try recipe for anyone who’s looking for a healthy alternative. These work amazingly on cheese platters and grazing boards, and people love snacking on them. If it's a dinner party, some nice cocktails and these amazing lavaash on a charcuterie board are going to give your party the bougie touch it needs. .

    How to make Peri Peri Lavaash ?

    1) Start by preparing the lavaash dough. In a large bowl add olive oil and season with chilli flakes, parsley, peri peri and garlic powder. Whisk it together.

    2) Add refined flour and water to the dough and knead it together using a silicone spatula. Once a soft dough comes together, cover and rest it for 45 minutes.

    3) After 45 minutes, preheat the oven to 180 degree celsius and transfer the dough to a floured surface.

    4) Roll out the dough as thinly as possible. Once a thin sheet of dough is achieved, using a knife, cut it into the desired shape and size.

    5) Lay the sliced pieces of dough on a cookie tray and bake them in a preheated 180 degree oven for 8 minutes or until they are golden brown and crispy.

    6) Once they are baked, take them out and let them cool completely before serving them.

    1. Make sure to mix the oil and flour thoroughly; no lumps should be present.
    2. Resting the dough is important as it helps the gluten relax and makes it easier to roll out the dough..
    3. If the lavash isn't cool before serving, they might not be as crispy as they should be.
