What is Lavaash ?
Lavaash is a flatbread which is quite thin. Though it is leavened in many recipes, it can also be made crisp without any leaveners and rising agents. It comes from Armenian cuisine in the middle east. The version we are familiar with is a non-leavened version baked thin till it gets crisp. The dough has a lot of oil and is seasoned with herbs to add flavour to the final crisp. It is accompanied with kebabs and dips of various kinds and is also served in middle eastern or mezze platters in several restaurants.
