How to make Balushahi

  1. Start by preparing the chashni in a ceramic frypan by adding sugar, water and orange food colouring into it. Let it all melt and thicken and then set it aside.  
  2. Make the dough by sifting refined flour in a flat utensil and adding, desi ghee, baking powder, baking soda, yogurt and some water as required. Knead it into a hard dough.  
  3. Divide the dough into small equal portions and shape them into a ball. Press them to make it slightly flat and dent them in the centre with a finger.  
  4. Heat some oil in a ceramic kadai and fry the balushahi on low heat till they turn golden brown.  
  5. Once fried, toss the balushahi in some warm sugar syrup and let it soak for 5 minutes. After this take them out and serve them with some pisa and silver vark. 

Expert Tips

  1. While making the chashni, do not stir it until the sugar is melted or it can crystalize.
  2. Add a few drops of lemon to the chashni to stop it from curdling. 
  3. Mix the ghee thoroughly into the flour so that there are no big lumps in the flour.
