How to make a chocolate Star Bread

  1. Start by preparing the dough. In a small bowl mix the yeast and warm milk, with a little sugar and mix them together. Set it aside while you measure everything else.
  2. In a large bowl add the flour, sugar, eggs, vanilla and cinnamon powder. Add in the activated yeast mixture and start kneading it. Once it comes together slightly, add the softened butter and incorporate it thoroughly.
  3. Once the dough is soft and supple, transfer it into a large greased bowl, cover it and let it rest for about 1.5 hrs or until doubled in size.
  4. While the dough is resting, prepare the chocolate filling. Add dark chocolate, fresh cream and butter into a bowl and melt it in a microwave. Once it is out, incorporate together and add cocoa powder and icing sugar and mix it as well.
  5. Remove the proofed dough from the bowl and divide it into 4 equal pieces. Tuck them into a seamless ball and cover for 15-20 minutes. After they’re rested, roll them out into 1 cm thick round sheets.
  6. Start layering the dough, by applying ⅓ of the filling on the first base, and spread it out evenly. Top it off with another sheet of dough and repeat when you apply the last sheet of dough.
  7. Mark the centre using a bowl. Start making slices onto the dough from the border of the marking towards the outer edge of the ring. Divide the ring into 16 equal strands. Pick two strands and twist them twice towards each other and connect them from the bottom.
  8. Do the same with all strands and let it rest for 30 minutes. Once rested, apply a thin layer of egg wash, made with 1 egg and a splash of milk, using a pastry brush.
  9. Bake the bread in a preheated 200 degree oven for 15-20 minutes or until a golden brown colour all over the bread. Once it is out, let it rest for 5-10 minutes and then tear it apart to enjoy.
