How to make Rum Balls
- In a large bowl add 2 whole eggs and an egg yolk. Add some caster sugar and using an electric hand mixer, cream the mixture till it is pale and sooth. Add vanilla extract to the bowl as well and mix it in.
- While the mixture is running, slowly add melted butter into it, while simultaneously mixing. Add cocoa powder to the mixture and fold it in using a silicone spatula. Add refined flour with baking powder and baking soda as well.
- Fold them into a thick and cohesive batter. Add in some milk to smooth out the consistency as well. Pour the mixed batter into a non-stick spring form baking pan and bake in a preheated 180 degree oven for 40 minutes.
- Take the cake out and demould it. Crumble the cake using your hands. Add some chocolate chips and condensed milk. Mix the condensed milk and cake with your hands and combine them properly.
- Shape the mixed dough into even sized balls and coat them in melted chocolate and crushed cashews. Drizzle some melted white chocolate over them and sprinkle some coloured sprinkles on top.
- Chill and serve them as it is.
