Rogan Josh

Made the classic traditional way keeping the spiciness and flavour of Kashmiri red chillies intact, rather than just another mutton curry which is being served as rogan josh nowadays.

Serves 2-3

Red chilli powder - 3 tbsp

Coriander powder - 1 tsp

Kashmiri dry chilli - 4-5 pieces

Tomato puree - 1/2 cup

Garam masala - 1 tsp

Saunf powder - 1 tsp

Mutton - 350 gms

Yoghurt - 1/2 cup

Onions - 3

Ghee - 50 gms

Ginger - 1 knot

Garlic - 6-7

Whole spices



1) In a milk pan, boil the whole Kashmiri red chillies till soft and then blend them into a paste, it should be a vibrant red colour

2) Start heating a kadai with ghee in it, add in the whole spices, once they are fragrant, add in sliced onions and keep frying till they become golden brown

3) Add in ginger garlic paste followed by washed mutton

4) Add in all the dry spices except saunf powder and roast the mutton for 5-6 minutes in the kadai

5) Cover the mutton with water; cover and cook for 30 mins

6) After 30 minutes add in the Kashmiri chilli paste and tomato puree and refill the water, cook for another 25 mins

7) Add in saunf powder and yoghurt and cook for another 5 mins

8) Serve with choice of bread
